Chickpea & halloumi tacos #shorts

INGREDIENTS

Filling
1 can chickpeas - drained
1 block halloumi - cubed
1 teaspoon za’atar
pinch salt
pinch black pepper
¼ teaspoon paprika
¼ teaspoon garlic powder
1 tablespoon oil
Salsa

1 pack or small jar (between 3-5 ounces) of sun dried tomatoes - finely chopped
1 ¼ cups diced cucumber
¼ cup finely chopped dill
juice from 1 lemon
1 tablespoon olive oil
½ small red onion - finely chopped
pinch salt/pepper
Other ingredients

6 taco shells of choice
hummus of choice (I used about ¼ of a container)

INSTRUCTIONS

Preheat oven to 425 degrees.
Add chickpeas and halloumi to a sheet pan lined with parchment paper. Toss in oil and spices. Bake for 25-35 minutes, until chickpeas and halloumi are crisp.
Add all salsa ingredients to a bowl and mix together.
Spread an even layer of hummus on each taco shell. Top with chickpea and halloumi mixture and salsa. Dig in and enjoy.
