I have tested out in a science project in school. How much egg yoke will ruin the meringue before it gets destroyed. I figured out that 8 drops of egg yoke is the maximum amount before it wont get the volume it needs and the consistency gets flowing/runny consistency.

My meringue was a little sticky, not as crispy when it came out, so I put is back in for a few minutes. However, it was still sticky. I decided to pop it into the freezer for about 10 minutes because the cold pulls out the moisture to make ice. When I checked again the meringue was not sticky anymore. So I would be happy if this can help anyone.

I believe the measurement rule is 2 tablespoons of sugar per egg white, such as 3 eggs whites with 6 tablespoons of sugar

For a lemon meringue pie, you can shred a little bit of lemon skin just a little on the top of the meringue for added kick

How much powdered sugar do you add? I've seen recipes that say anywhere from 1/4 cup to 1 cup of sugar, but I have not seen a recipe that calls for powdered sugar
