Overnight Layered Chicken Salad

Mom is at it again with another summer salad. Most of this you can get right our of your garden as she always has. This one is just another way of having a full meal without heating up your kitchen on those hot summer days. Let me know what you think about her salad and y'all enjoy.

So here ya go.

Ingredients:
6 cups shredded lettuce
1/4 cup bean sprouts
1 can water chestnuts, drained and sliced
1/2 cup green onions sliced
1 medium cucumber sliced
4 cups cooked chicken - diced
2 packages frozen peas - thawed and dry
10-15 cherry tomatoes/sliced in half

Spread lettuce in a 4 quart bowl and top with bean sprouts, water chestnuts, green onions, cucumbers and chicken, repeat a layer and then evenly distribute peas on top. Top with dressing and cover and put in refrigerator overnight. Just before serving add tomatoes cut in half.

Dressing:
2 cups mayonnaise
2 teaspoons curry powder
1 tablespoon white sugar
1/2 teaspoon ginger
Mix together to combine.

I love making layered salads and have done them for probably 40+ years. Never did them with chicken though. The dressing with ginger, I imagine, gives it an Asian flair. No bean sprouts (also Asian) maybe use some crumbled noodles
