Creamy Corn Salad

This creamy corn salad is perfect for spring and summer lunches! It's simple to make, and full of flavor.

This creamy corn salad is a great way to use some of the fresh corn harvest from your garden or farm. It's also a great way to use up any leftover grilled or roasted chicken or steak. Stuff this salad with your favorite veggies from the garden and you're ready to go! Let me know what you think about this version and y'all enjoy.

Ingredients:

2 lbs. corn
1 pint or so of cherry tomatoes-diced
1 green pepper diced
1 red onion diced
2 teaspoons honey
1/2 cup mayonnaise
1/3 cup sour cream
2-3 tablespoons apple cider vinegar
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon dried mustard

Now the easy part, combine everything in a large bowl and enjoy.

Yummy! I love summertime salads! You’ll adjust to the season changes. Just takes a bit of adjustment and acceptance. Here in NM we really just have 2 seasons…winter and summer. Spring is just horrible wind almost all the time. Thanks for sharing this yummy recipe! Tomato and mayonnaise sandwiches are the best but i have to admit that Jersey Tomatoes are the best! I grew up on those and you just can’t get them or grow them any better than those. I think its the soil there. You’re so funny with your story of your slide to the creek. Try going down sideways when you walk down. Don’t try to walk straight down a hill. I always turn sideways and make my way down instead of trying to walk down regularly. Hope that makes sense. Lol😂

Tomato sammy! CAN NOT BE BEAT. Most of the Morels I have found have been on East facing hill sides. Ha, LOL, if you didn't use different spoons, Y.T. police would get you for cross contamination. This looks great. Thank you. God Bless and stay safe.
