His restaurant has a different feel compared to most in this series so far. Theyre mostly dimly litted rooms with a more grand feel to it, but his place has a more laid back, chill vibe to it, and strikes unique, kinda like how jazz is too

So happy to see Saito san on the show. I’ve been to Sushi Note once, high quality omakase with reasonable price. Saito san is a funny guy. 👍👍 love this place.

Finally! Finally, I've heard a true sushi-master say that the "Swedish gravlax" is a kind of preparation for sashimi. Never thought it would happen. But as a Scandinavian, I'm proud to present the idea of "gravlax": Cured Salmon with dill, salt, sugar, and pepper, -as are the more traditional flavors. There are much more adventurous and modern spices used today! There really are no limits. Anyone can make their own curated salmon _ just don't forget to freeze it either before or after making the curing for at least 48 hours to be safe. It's very important, as it kills the parasites that may be in the salmon.

Crazy to think my buddy and I just randomly went to his old spot, 4 on 6, to see if it would be any good. It was amazing!! Sushi Note is amazing!! Amazing chef and person.

4:40-5:25 This was an introduction to the Trumpet Fish. I never heard of it. This Chef’s knowledge is impressive. His love for jazz is an added unexpected plus.

Seeing him participate in such an unusual activity form the japanese culture like haggling, makes me notice how he is a man who is now enveloped in the culture which he lives and works now; The US culture.
Not complaining at, just found it notable. 😁

I could easily see me going in there. Dropping a couple of bills on the counter, and tell him make to me some sushi. His choice. I have never hear of any of those fish. Expect for the trumpet fish. That would be fun.
