I personally like the sound of fingers sliding on the strings, it can sound awesome on some tracks.

One problem I have a lot is when I remove my fingers from strings they will ring out when I go to move to another string to fret. Not sure what to do to correct that...

What about using a rosin - specifically for string noise

I found that buying smooth bass strings helps eliminate a lot of string noise, these strings are wrapped with a wider smooth finishing. That was on a bass guitar, later I bought strings with a plastic like coating on it.

I used Gypsy Jazz lights which are very small gauge acoustic strings, and they are extremely squeaky. So, "use smaller gauge" is incorrect. Try flat wound or flat top strings.

D'Addario Half Round electric strings have little to no string noise. The only strings I use.

LOL, switch to flatwounds. :P no don't do that. (unless you're a bassist). But stop grabbing the neck so hard. Learn to control your grip. I'm actually a lefty that plays Right handed. I don't think it helps me chording, but once I got good enough to stop gripping the neck like an axe with which I was chopping wood, I not only had less of that but that it is way easier to mute strings with my left index finger moreso than my right palm. Also maybe your neck is too thin. I had an old CBS era Mustang that was like grabbing a broom handle.
