Thanks. You are so close. Just add 1/4 or 1/2 cup of buttermilk with live cultures in it, 8 drops of of 30% calcium chloride (diluted in tablespoon of water) and 8 drops of rennet (diluted in 1 tablespoon of water) to help tighten and form the curd. warm it to about 85. mix, turn off the heat, and let it sit for 5 hours in a warm place, cut the curd into 1 inch cubes, by cutting horizontaly and vertically.., heat to about 110, no hotter, and stir every 10 minutes for two hours. Heat on, heat off. separate curd, and eat.

Love cottage cheese with mixed fruit I find the store bought cottage cheese has a lot of stuff in them:) I have some cast iron pots that are enamel coated that were my Great Grandmothers :) I like to keep the house cool even in winter:) Looks good looks easy to make too:)

I keep my house the same temp as well I don’t like to pay pge to warm up when I can do it with warm cloths and socks and blankets. I would rather use my oven to bake then use my heater. I don’t use my dryer often I hang my cloths to dry as well.

My favourite is cottage cheese and chives. The weather here in UK has been wet and very windy today the leaves have been lovely autumn colours but there's probably not many of them left after today ☹️

This is actually the same steps to make mozzarella, only instead of stopping you would heat up the curds in the whey to a certain temp and pulling it and stretching till smooth and then drop in cold water.

Ewwww I buy cottage cheese and it does not have all those ingredients in it. This looks great and I am going to try it for sure. Also do you know that if you turn your cottage cheese, yogurt, sour cream containers upside down in a bowl in fridge they stay fresh much longer.
