Simplifying the Sourdough Process - Day 1

Today is day 1 or my sourdough starter! Sourdough is such an intimidating process, but we’re going to simplify it together. All we have to do today is combine flour and water. Directions for everyday below! Follow along as I share each day of the process.
Day 1–
1. grab a clean jar and add 1/2 cup of unbleached all purpose flour to it (when filling your measuring cup with flour, scoop the flour in with a smaller spoon to allow for more accurate measurement of the flour, and be careful not to press the flour down when leveling.)
2. Add in 1/4 cup + 1-2 tsp of warm water, and mix until there’s absolutely no dry flour left, and you have a thick paste.
3. Cover loosely with a lid and place in a warm location (some suggest a microwave).
Day 2– check to see if any bubbles have formed. Leave your starter for another 24 hours.
Day 3– start feeding. Add another 1/2 cup of flour and 1/4 cup of water, mix well. Leave in warm place.
Day 4-5– repeat day 3.
Day 6– your starter should be bubbling by now! If it’s overflowing in your jar, discard half of it before the next feed. Continue feeding the same way as day 3.
Day 7– your starter should be active. To use, leave in a cabinet and feed every day or place in the fridge and feed once a week.
Each time you want to feed, discard half of your starter then feed with a 2:1 ratio of flour and water (you can do 1/2 cup of flour and 1/4 cup of water).
