It needs to fermentate for 2 weeks before it can be placed in the fridge, other then that love this explanation thank you

Just keep a few ounces in a jar in your fridge. When you want to make bread, take out the starter, add the necessary amount for the recipe and then let it double in size. Once you use the starter, you’ll be left with the same amount as before, about a few ounces, and put that back in the fridge. Simple.

Ok, so you keep yours in the fridge. Let’s say that jar currently has like 300 grams of sourdough starter. So every 10 days you take it out of the fridge, discard 200 grams and keep 100g, adding an extra 100g of water and 100g of flour to feed?

Try using it straight out of the fridge. I have identical results as room temp, so it saves a lot of time.

I'm just curious, so do you mix the starter before taking any of it out for recipes? Doesn't is collapse when you stir it or is that undesirable?

How much starter remains in the container before feeding? You add 100g of flour and 100g of water. Other formula I saw was 25g of flour but yours look like a lot of starter which would mean all equal amounts? 1:1:1?

Please help!!! Im on day 8 and I followed your recepie for making the started - I did the water test and it sink in. What do I do at this point ? Feed it and what quantity ? Please what should I do there are some bubbles and it only did 1/4 doubled in size. 😢

Can you use a plastic can instead of glass or is it a rule to use glass?? I know metal is a no, but is plastic a no as well?

My sourdough has never risen but it smells like nail polish remover. Had it for like 6 days now, feeding it every 24 hours as instructed, and whilst it bubbles quite a lot it’s never really risen. Any advice? I don’t want to give up on Adam and chuck him, but I will if he’s doomed
