Anyone else have crazy busy weeks?? I thought that once my son was old enough to drive himself, life would slow down. I was very wrong. Our lives are busier than ever and I need quick dinner solutions. If you need quick and easy weeknight dinners, this video is perfect for you! I hope you enjoy!!

RECIPES:

*If you have the Auntie Nono's Firecracker Sea Salt, I would use .5 tsp of that to replace the other .5 tsp of salt added to the dish. Gives it a smokier, spicier kick.

LAZY CHICKEN AND DRESSING
Ingredients:
2 boxes of Stove Top Stuffing (I use chicken flavor)
2 cans of cream of chicken soup
1/2 cup chicken broth
3 celery stalks chopped
1 small onion chopped
2-3 chicken brsts
1/2 teaspoon salt
1/2 teaspoon pepper
*I added a handful of julienned carrots just because I had them on hand. I also skipped the S&P and used Auntie Nono's Everything Seasoning.

Spray the crockpot with cooking spray. Combine all the ingredients in the crockpot and mix well. You want the stuffing mix to be mixed well with the soup, broth and veggies. Lay the chicken breasts on top of the stuffing mixture. Sprinkle the salt and pepper evenly over the chicken. Cook on low for 4.5 hours. Shred the chicken and combine with the stuffing. The stuffing will look “mushy” on the surface, but when you shred the chicken and stir to combine with the stuffing, it’s the perfect consistency.

MANDY'S GREEN BEANS:
4 slices of bacon, chopped into bite-sized pieces
2 cans green beans, drained
1.5 - 2 cups chicken stock
1 tsp garlic powder
1 tbsp brown sugar
salt and pepper to taste

Cook bacon in same pot you plan to cook green beans. After the bacon is done, do not drain the grease! Pour in green beans, chicken stock and seasonings. Bring to a boil and then reduce heat to simmer for about 30 minutes (uncovered) until most of the liquid evaporates.

Korean here!✋🏼white pepper is more mild and earthy and has a flavor profile more suited for asian cooking! It goes great with spicy, fiery, garlicky, gingery punchy flavors!

I made this stir fry tonight and with “yums and ooohs” my husband said “you can make this again” which is the HIGHEST praise he gives a meal -sort of like Steven saying it’s a “ go back “.
I thoroughly enjoy you and your videos, your family (especially Miss Gracie Lou- we rescue abandoned, neglected and abused animals so no offense to the 2 legged in your family but Missie Lou-Lou just steals my heart), and the joy y’all bring to us “subbies”!

FYI freeze the velveta for about 10 or 15 min it makes it easier to cut

When I do my enchilada soup, I put crushed tortilla chips, some grated Colby Jack, and sliced avocado in the bottom. Then I spoon the hot soup over top. Then I sprinkle a few diced tomatoes on the top. When that soup gets the avocado warm and melts that cheese, it is so good! The teriyaki bowls look great!

I made a delicious red enchilada sauce that has incredible flavor. You can try it when you are unable to find the canned. ❤

2 Tbls All Purpose flour
2 Tbls. Olive Oil
1 Tbls chili powder (more if you prefer spicy up to 4 Tbls.)
1 tsp. Onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp cumin
1/4 tsp oregano
1 pinch of sugar
2 Tbls. Butter
2 1/4 cups chicken broth
2 Tbls. Tomato paste

Make a roux by adding flour to olive oil and whisking together over medium high heat for 1 minute. Add in spices. Whisk for 30 seconds. Add in chicken broth and blend well for about a min. Add in tomato paste and butter and blend together well. Let simmer on medium heat for about 5-7 minutes, stirring occasionally until thickened. I poured it into a glass measuring cup for easy pouring. It is so full of flavor. 😋
