Anyone else have crazy busy weeks?? I thought that once my son was old enough to drive himself, life would slow down. I was very wrong. Our lives are busier than ever and I need quick dinner solutions. If you need quick and easy weeknight dinners, this video is perfect for you! I hope you enjoy!!

RECIPES:
*If you have the Auntie Nono's Firecracker Sea Salt, I would use .5 tsp of that to replace the other .5 tsp of salt added to the dish. Gives it a smokier, spicier kick.

LAZY CHICKEN AND DRESSING
Ingredients:
2 boxes of Stove Top Stuffing (I use chicken flavor)
2 cans of cream of chicken soup
1/2 cup chicken broth
3 celery stalks chopped
1 small onion chopped
2-3 chicken brsts
1/2 teaspoon salt
1/2 teaspoon pepper
*I added a handful of julienned carrots just because I had them on hand. I also skipped the S&P and used Auntie Nono's Everything Seasoning.
Spray the crockpot with cooking spray. Combine all the ingredients in the crockpot and mix well. You want the stuffing mix to be mixed well with the soup, broth and veggies. Lay the chicken breasts on top of the stuffing mixture. Sprinkle the salt and pepper evenly over the chicken. Cook on low for 4.5 hours. Shred the chicken and combine with the stuffing. The stuffing will look “mushy” on the surface, but when you shred the chicken and stir to combine with the stuffing, it’s the perfect consistency.
MANDY'S GREEN BEANS:
4 slices of bacon, chopped into bite-sized pieces
2 cans green beans, drained
1.5 - 2 cups chicken stock
1 tsp garlic powder
1 tbsp brown sugar
salt and pepper to taste
Cook bacon in same pot you plan to cook green beans. After the bacon is done, do not drain the grease! Pour in green beans, chicken stock and seasonings. Bring to a boil and then reduce heat to simmer for about 30 minutes (uncovered) until most of the liquid evaporates.
