It's so weird to be lowkey emotionally attatched to a batch of sourdough and her adventures.
I've read that there's all kinds of things you can make with the pour off as well as the dough, if so inclined.
It's nice to see Jane doing well and to see you (and the kids) delighted at her new growth.

I'm so pathetic, I actually cheered out loud. I decided to call my sourdough started DOUGHLORES (Dolores) . But looked up meaning of name means sorrowful and pain. So now it's Phoenix, looked up meaning of that too, means ressurection and life after death. Think that's better. Now I need one of those boxes 😂😂

Jane needs to double 3 days in a row to be safe to use! For reference my starter took 20 days to establish! Congrats and welcome to the world of sourdough!

I just learned that you can use discard as a roux, mind blown! Please use your discard now in your baking instead of throwing it away! You can keep a discard jar in the fridge

Day-by-day breakdown:
Day 1:
Combine equal parts flour (whole wheat or all-purpose) and warm water in a clean jar, stir well, cover loosely, and leave in a warm place.
Day 2-3:
Check for any visible bubbles on the surface; if not, continue to leave it in a warm place. The mixture might smell slightly sour, which is normal.
Day 4-5:
Start "feeding" the starter by discarding half of the mixture and adding fresh flour and water in the same ratio as the initial mix. Stir well and leave in a warm place.
Day 6-7:
If the starter is very bubbly and has a strong sour scent, it's ready to use. Continue feeding it twice a day with a slightly smaller portion of starter.
Important points to remember:
Temperature:
Keep your starter in a warm environment (around 70-80°F) for optimal yeast activity.
Feeding ratio:
Most recipes use a 1:1:1 ratio of starter:water:flour when feeding.
Discarding:
Regularly discard a portion of your starter to prevent it from becoming too thick or sour.
Signs of a healthy starter:
Lots of bubbles on the surface, a slightly sour smell, and a noticeable rise within a few hours of feeding.

My son didn’t sleep through a single night until he was 6, so I feel you. At that point it slowly tapered from once every month or two to eventually at about 9 sleeping through every night. Then I split with his dad and could only afford a 1 bedroom apartment, so the nights he was at my place he slept in my bed anyway. About a year later I finally got a 2 bedroom so it was a time before I reliably had my bed to myself. Then I got 2 big dogs 😂
