We do that and call it sloppy Giuseppe (Italian for Joseph) but we put it n garlic bread. We also do a loose meat sando with brown gravy and put it on a hard roll and call it untidy Joseph

I'm Italian and I have made Italian sloppy joes. It's almost the same as the way you made it only I used plain Italian seasoning garlic and onion powder in the meat. I would put the provolone cheese on the bun first folding it. Then put the meat on top so the cheese melts easily. I make this on a hot day when I do not feel like rolling meatballs.
