Thanks for posting! I love the inexpensive bone-in chicken thighs, deboning the meat for stir frying or curries, and using the bones with residual meat along with garlic, ginger, yellow onion and black peppercorns for making bone broth with the Instant Pot.

Much more affordable. I always cut up my whole chickens, but I've never deboned anything. I love thighs. Thanks for an easy method.
Update: I have since done this!! Kroger had bone-in chicken thighs for 49 cents a pound. I deboned 20 lbs quick and easy and canned and froze them!

Amazing. In my mind I thought this was going to be so difficult but you made it look easy. I love chicken thighs with the skin on and bone out but you cannot buy them that way or find a butcher to do it. Even the speciality meat shops won’t do it. This is a great video and I’m going to do this. Also, I’m sure the key is a sharp knife. I don’t think grocery stores have butchers anymore. I think all the meat comes in prepackaged. I will save the bones for my homemade cat food where I cook them in the instant pot for 8 hours then add it the the prepared chicken and supplements.

Thank you for making it so CLEAR. I have watched so many videos that didn't cover this ... I found Martin Yan parting out a chicken in 18 seconds (but not showing how to do it - and not deboning it) which was impressive and he is funny. I found Jacques Pepin doing a marvelous job on keeping a chicken WHOLE while deboning it .. but that wasn't what I wanted ... although he's phenomenal. I wanted to make individual pieces from one whole chicken - just like you did with the thighs. The rest of the chicken I can kind of figure out how to debone - but the thighs seemed difficult until I found your video. THANK YOU. This allows me to afford better quality, healthier, even organic chicken at cheaper prices and then break it down myself.

Ended up using this video last night as we accidentally picked up bone in/skin on chicken thighs. Deboning went perfect, I'd say better than store bought because we were able to take off the extra bit of gristle we don't care for. On top of only taking a few minutes, bone-in is considerable cheaper - This will be our go-to from now on. Thank you for the tips! The chicken was smoked to excellence
