Usually I leave the bone in for some extra flavour. But butterflying and cooking in the Greek style for a change today. Stuffing with oregano, preserved lemon peel, garlic and rosemary. And a lemon pilau or potatoes to accompany… I can’t make up my mind. I like your style Mr Food Wishes—you’re a man after my own heart. :-)

brilliant! just what I needed when I unwrapped the 'lamb shanks' my brother said he got for tomorrow's bbq (I LOVE lamb shank) only this is what was in the package. Oops. Hit rewind. Thank you for the concise instructions. Great voice work.

I was taught you need to clean up at the silver skin line on the big side to cut a gland out of the leg, but I'm sure this will be good too.
