I love to look at those jars of home canned fruits and veggies.My grandmother canned and i would just go in tbe big closet where she kept her jars of food and look at them.She had more room dedicated to food than clothes, lol.She told me she did all that work for us, her family..She also fed the visiting preachers and elderly neighbors.

When I was growing up, we would shell the peas, not wash them, then put them in a white pillow case in the freezer, and when we were going to cook them, just go to the freezer and get out what we needed to cook. Enjoy watching and learning how to can them.

I wasnt pressure canning 3 yrs ago lol but i got my hands on fresh purple hulls couple days ago now i can can them up 😁😁🥰🥰thank you

I rinse my peas in a colander a couple of times to remove the slime then look them real good.

I believe you can raw pack, put in sterile jars at room temp, put in ur canner and allow the water in canner and room temp jars to all come up to temp together and then put ur weight on when needed. That's what I am doing.

Wanda, did you vent steam from the canner for 10 minutes before putting the weight on top? I didn't see that in the video but maybe I just missed it. I love purple hull peas :)

I'm so thrilled this video popped up because I was just about to email you asking if you have one showing how to can fresh shelled peas and butter beans. I live over here east of you in Lucedale, MS so I know however you can things it'll work for me too.
Do you ever offer a workshop sort of thing for canning? If after all this pandemic nightmare is over I hope you'd think about doing one. I'd be the first one in line. 😉

You mentioned the peas that you didn’t have time to can a few days before so you were thawing them out and then canning. So did you freeze them for a few days and then can them.

I know this is going to sound crazy because I am a well seasoned cook. However, my mother was always terrified of pressure cookers, so I've never used one. My Daddy used one all the time, but my mother wouldn't let me in the room, so I seriously do not know how to use one. I want to use Daddy's old pressure cooker (they both died 7 years ago, ) and it is time for me to learn how to use a pressure cooker. Daddy's has sat in my kitchen for the past 7 years, but he always kept things in good condition, so I'm not afraid of it, but my mother's dire warnings about how it was going to blow up keep going through my head. So I wish you would do a video on how to use a pressure cooker. I know you're busy and most people probably already know this, but my mother seriously thought it would blow up. So I just avoided the issue to get her to leave Daddy alone, but now....I want to know how to use Daddy's pressure cooker. Thanks!
