Kitchen Time: Canning Purple Hull Peas For Winter Feast

Hey y’all from north Mississippi!

Kitchen Time again!

Today’s adventures in the Kitchen we are canning purple hull peas for feasting on in the winter!

Hull peas and wash thoroughly.
Pick through and discard any bad peas.
Pack the peas in the clean and sterilized jars.
Leave a 1” head space at the top of the jars.
Fill jars with hot sterilized water.
Use a tool to remove all air bubbles in each jar.
Prepare canner for use by filling with hot water to line.
Place jars in canned without touching.
Add enough water to cover the jars.
Vent the pressure canned for ten minutes.
Apply 10 pound weight and can for 40 minutes.
Let canner come back down to normal pressure.
Take jars from canner and set on counter on towel.
Once jars have set take bands off and add to cellar.

That’s awesome man!! I just processed 20 pints a couple of days ago. I really enjoy canning. Great video!!

Has it started to cool down there yet? In Spring, Texas it is a lot cooler now in mid October.
