RECIPE (3 servings, 20min prep time):
-2 1/2 Cups cooked rice (I used sticky rice and you might have to add a little flour if using another kind of rice)
-2 Tbsp Thai red curry paste
-2 cloves of garlic
-1 shallot
-3 lime leaves (optional)
-3 Tsp sugar
-3 Tsp light soy sauce or vegan fish sauce
Combine everything and shape into little balls.
Shallow fry in oil until crispy.
Dressing:
-2 Tbsp light soy sauce or vegan fish sauce
-1 Chili
-2 cloves garlic
-juice of 1/2 lime
-2 Tbsp sugar
-1/4 cup (60ml) water
Mix
Else:
-a bunch of fresh mint and parsley/cilantro
-toasted coconut flakes and peanuts
-fried shallots
Assemble everything in a bowl and combine with the dressing.
Serve in lettuce wraps.

In Laos, they don't use western white cane sugar, but palm sugar. And the balls are made with sweet glutenous rice.

Laotian and Thai food are two of our favorites. Ethiopian has always been very comforting to me. Living in walking distance to our asian market is great.

cool and looks delicious! I wouldn’t call it nam Khao, without the nam. Nam is the fermented pork that is add to this crispy rice dish. so I guess you can call it crispy rice.
