Growing up on a dairy farm with eight siblings . We had laying hens, every winter we’d help Mom make noodles she’d mix a giant bowl of dough separating the eggs using only the yolks for the noodles, the whites she used to make Angel food cakes . She had a noodle making machine and we’d dry the sheets of dough on top of a warm wood range until they were the perfect dryness and us children would crank them through the machine to cut them, some wide and some fine . Then we’d spread them out in the cold spare room bed upstairs on a sheet and let them dry 24 hours before bagging . We used the wide ones for soup and saved the fine cut for company cooking them in saffron water and serving with loads of browned butter . So delicious!
