HOW TO MAKE GNOCCHI from leftover mashed potatoes

Don’t let those leftover mashed potatoes go to waste! Roll them into something delicious with this easy recipe for gnocchi. Watch the how-to video and see the recipe below.
Ingredients
• 2 cups all-purpose flour
• 1 tsp baking powder
• 2 cups leftover mashed potatoes
• 1 egg, lightly beaten
• 2 tbsp butter
• 1/4 cup fresh sage, chopped
Directions
Step 1 – In a medium bowl add flour and baking powder, mix well and set aside
Step 2 – In a large bowl add leftover mashed potatoes and make a well. Add in egg and mix well.
Step 3 – Slowly add the flour mixture to the leftover mashed potato mixture and knead until a soft dough is formed. Be careful not over work the dough. It’s okay if you don’t use all the flour!
Step 4 – Transfer the dough to a lightly floured surface and section into four equal parts using a knife or pastry cutter. Roll out one section of dough into a rope about 1-inch in diameter. Cut the rope into 1-inch pieces and then gently roll each piece on the back of a fork to create ridges. Repeat with remaining dough.
Step 5 - Bring a large pot of salted water to a boil. In small batches, add the gnocchi and continue to cook for 2 to 3 minutes after they begin to float. Remove with a slotted spoon.
Step 6 (optional) – In a large pan melt the butter over medium heat. Add in cooked gnocchi and sage. Continue to cook until gnocchi are browned. Top with freshly grated parmesan cheese.
Step 7 – Serve and enjoy!
