chicken breasts tend to be stringy but a good brine seems to "fuse" them together as one. if the breast are really thick, I'd butterfly them 1st.

Christine, this was a fantastic video that had everything I needed to get the basic idea of a brine. A lot of other videos I've watched give an entire recipe and I really enjoy experimenting on my own so this gave me an amazing blank canvas to work with. I was wondering: if I add like 1 cup of white wine for flavor (thinking like a lemon/pepper/garlic sort of seasoning?), should I subtract that amount of water or add more salt (or not go with wine at all lol)? Thank you!

I am a cook. At the restaurant where I work, I cook 40 lbs of boneless chicken thighs at a time every day. 40 lbs of raw chicken I put on the grill turns out to be 22 lbs. I never throw away the water left by the chicken. I let the chicken absorb that chicken broth again. I am very pleased with the taste of the product I obtained, but it saddens me to lose so much. I heard from a friend that if I do the brine procedure, my loss will not be that much. My question to you is which ingredients, how much, and how long should I use to brine 40 lbs of chicken thighs?

Would’ve been helpful to know if you put the chicken & brine in the fridge for the 40 mins or leave out?

The brine method is great, the recipe is a little too simple for my taste and the cooling method is straight up a crime, you destroyed a piece of great meat.
