quantity of salt looks ridiculous, but realize that she's using kosher salt, which is less dense than regular fine grain salt. also factor in time into equation. this recipe might be good for a 1 hour brine ( never tried this though). but if you are gonna keep it in salt solution for longer, you gotta add less salt. longer it stays in salt, more salty chicken will get. if you are gonna keep it in brine overnight I recommend about 1 - 1.5 % salt. for 2 liter water that makes about 20-30 grams regular fine grain salt. for 3-4 hours about 2% works fine.

you need to mention that this is kosher salt, bet there will be many who uses regular, which will be too salty.

I'm really surprised hanging the chicken to dry out alittle in the fridge for a couple of hours isn't really seen on youtube...don't know why not, definately a crispier skin once baked.

Meldon salt is a finishing salt! Why not use a cheaper salt that will just dissolve in the water. Finishing salts add crunch to a finished dish, which is totally not the intended use here

My god! One cup of salt! It should be one tablespoon of cooking salt per litre of water. Even that is too much salt sometimes.

What will happen if you brine the chicken 2 days to 1 week? I'm not sure if because of brining the chicken for too long, blood came out of the chicken when I fried it.
