Berberé Chicken Pasta with Creamy Spinach Sauce | EastAfroEats

Add some flavor to your dinner tonight! Berberé Chicken pasta is sure to be a palette pleaser.
INGREDIENTS AND INSTRUCTIONS ARE BELOW:
Ingredients
Spices for marinade
- 3 to 5 chicken breasts
- 2 teaspoon garlic powder
- 1 teaspoon berberé
- 2 teaspoons chicken seasoning
- 1/2 teaspoon dried parsley
- 1 teaspoon black pepper
- 1 teaspoon avocado oil (olive oil)
Sauce prep:
2 tablespoons butter
1 1/2 onions diced
3 to 4 garlic cloves
3 to 4 sun-dried tomatoes
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon dried parsley
1 tablespoon berberé
1 teaspoon salt seasoning
1 tablespoon flour
1 1/2 ~ 2 cups of cream
2 cups of spinach ( washed and dried)
3 to 4 tablespoons grated pecorino cheese or Parmesan cheese
One ladle of pasta sauce.
DIRECTIONS
1. Flatten out chicken breast using a rolling pin so the thickness is consistent throughout.
2. Season with the spices listed and sear on high heat on each side for 2 to 3 minutes.
3. Remove from pan once the outside has a golden brown color – the chicken should not be fully cooked as it will continue to cook in the sauce.
4. In the same pan add the butter and cook down the onions, garlic, sun-dried tomatoes for 2 to 3 minutes.
5. Add the spices and flour and cook down for 1 to 2 minutes.
Add the half and half cream and spinach.
6. Bring to a boil and reduce to a medium simmer for 5 to 6 minutes, until sauce thickens.
7. Meanwhile, cook pasta of choice according to package instructions ( remember to scoop some pasta water and save it for later)
8. Add the pasta water cheese and lemon juice to taste.
9. Bring the sauce up to a boil add the chicken back to the sauce, reduce to a simmer on medium heat for five minutes and serve over pasta of choice.
10. Garnish with basil or fresh parsley.
11. Serve hot and enjoy! Bismillah
