The original context of the scene is really sad because he’s talking about how he didn’t grow up in a luxury palace with soft beaches, a slave in the desert . But the script should have focused more on that than advancing too fast . I almost feel like this scene was supposed to be longer but it was cut . For her sand reminds her of Beaches and Comfort. For him it reminds him of starving and enslavement and death.

The best part about this scene is the silence before it. It's not like they had some conversation that led to the topic of sand. They quietly were enjoying the view but all Anakin could think of was that damn sand. He just had to break the calm, peaceful silence to express his hatred.

This was Lukas masterfully foreshadowing how much hatred affects Anakin. Without this line the prequels would simply be incomplete.
