Either salt the steak directly before cooking or leave it salted over night. All you did was draw the moisture out of the steak without giving the steak an opportunity to reabsorb the moisture. You essentially just dried out the steak for no reason

Best advice is to make sure that steaks gets seasoned and then set aside to rest at room temp for an hour before hitting any hot surface

but i cheap out on dry Aged a lot lately, somehow i did overeat on it past 1year and a half!
works like a charm, every time!

Imo a heavier pan is always better for steaks because the heat retention is way better and that gives you a better crust and more time to develop the crust cause the heat penitrates less
