Today we show you how to make our Reaper Madness ~ Fermented Carolina Reaper Hot Sauce ~ HOT Oh yea.....
It is hot and it is very easy to make....

Ingredients
2 lbs Cherry tomatoes
11 Carolina Reapers
1/2 cup Sugar
1/4 cup Salt
1 Cup of Vinegar
1/2 cup fresh Garlic
2 Limes
1 Quart of 4% Salt brine... 2 Tablespoons Sea Salt to 1 Qt. Water

Hi Tom! "Hot sauce is supposed to be hot, but it's also supposed to be tasty!" I've thought about this too, but never heard it stated so well! Looks great. Totally agree that it's easy to make a hot hot sauce, but not as easy to make a tasty one. Do you sterilize the bottles or measure pH before bottling? I've read from some sources that that is necessary. But if you're going to refrigerate I don't see the need?

Problem with this is that you've added sugar at the end. This will 100% initiate the fermentation process again 🤔 needs to be heated in a pan after the sugar to kill the fermentation. other wise it sounds pretty bl00dy tasty 👍🏽

Can you rehydrate the chili's in water or the vinegar and blend it with the other ingredients without fermenting it?
