The second answer is absolutely perfect. And most humble and down to earth.
Especially because it recognizes that Physics is a description based on observation.

Sabines answer is the Most useful. Priya's answer that gravity is a 'profound confluence of space and time, etc...' is mostly useful for colloquial conversations. Otherwise describing what something "is" tends to get into an epistemological argument about the essence of a thing that does not quantify and qualify the question.
ie. They Both answered the question adequately for different audiences.

Stuff pushes against space, bending it, and space pushes back.

Less big stuff pushes less, and so is pushed to move along the path of bent space towards the bigger stuff.
To the stuff, it’s moving straight on its path, but the path is bent so it moves with the path.
Like you walking on the surface of the Earth. You’re walking straight, but your path is bent in a circle, so you’re walking on an arc without meaning to.

All this pushing and bending is strongest the closer you are to the stuff, and is less and less strong the farther you get.

That’s how I explain it to a child.

The answer the second scientist gives is perfect in my opinion, it's factual it doesn't stretch out beyond our abilities and most of all it's not arrogant and conceited. All because we give something a name doesn't mean it stops being mysterious, yes there is mystery in the universe, it may be just as important as understanding it.

Translating what Sabine said, consider Gravity felt by the Earth and the Sun, is caused by the presence of the two bodies, which deforms the spacetime so the flow of time is faster if the Earth moves toward the Sun (the manifold), and this deformation is perceived like if it was an attracting force...

I used to meditate to where my perception of reality would become augmented. Priya's description of a confluence is how I can describe what this physical world Is based on some of my experiences. I could literally see ribbons of future moments, flowing to a meeting point would to become reality and then exit to flow back out of dimension. It is as though we are 5th dimensional beings who decided to look and observe a 4th dimensional object(our life) and what we see is an 80 year section of that object

Gravity field is a polarization phenomenon like electric and magnetic field. When countless neutral atoms of planet are slightly polarized from center of planet by the positive charge of core and they form daisy-chains, gravity is manifested but only on planetary scale.

Science DOSEN'T STOP AT DESCRIBING OBSERVATIONS!! That isn't even the beginning. Could you imagine a doctor coming into your room and saying, " Your dying.", leaving, and thinking themselves a great scientist.
