A heart warming soup perfect for your winter evenings.

CREAM OF MUSHROOM SOUP

Ingredients

12-16 button mushrooms, cut into quarters
6-8 dried shiitake mushrooms, soaked for 15-20 minutes and sliced
10-15 morel mushrooms, soaked
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 teaspoon fresh thyme leaves + for garnishing
1½ tablespoons refined flour (maida)
Salt to taste
1½ cups milk
Crushed black peppercorns to taste + for sprinkling
¾ cup fresh cream + for drizzling

Method

1. Heat olive oil and butter in a deep non-stick pan. Add garlic sauté till fragrant. Add onions and sauté till it turns translucent.
2. Add thyme leaves and flour, mix well and sauté for a minute.
3. Add button mushrooms, shiitake mushrooms and salt, mix well, cover and cook for 5-6 minutes. Add morel mushrooms with the water and mix well. Add salt and mix.
4. Remove from heat and blend. Add water as required and blend to a smooth puree.
5. Strain the puree in another non-stick pan.
6. Heat the strained puree, add milk, mix well and cook for 5-6 minutes.
7. Add cream and crushed peppercorns, mix well and simmer for 2 minutes.
8. Drizzle cream, sprinkle crushed peppercorns and serve hot with garlic bread.

For those who are worrying about ingredients- I tried this with only button mushrooms ( cheapest among all three) and used Tulsi leaves instead of thyme leaves and trust me it tastes amazing. One packet of mushrooms (cost appx.₹40-₹60) is sufficient for 4 people.

I have come to agree that it is impossible to recreate a Sanjeev Kapoor recipie. I can for once recreate Gordon Ramsay's recipie, but Sanjeev Kapoor sir is on some other level. Its IMPOSSIBLE to get to his level!

Should not have taken out the bits and pieces of mushrooms totally from the soup. They give the soup its texture. It is after all a soup, not a mushroom drink.

What do you call thyme in hindi? As far as i know its not something you get in the bazaars in mumbai.

Straining is unnecessary. Those chewable bits make this soup more tasty

3 things just shocked me!
-Why blend expensive mushrooms?
-Why use three different kinds of mushrooms ?( very high on budget)
- why use the stainer?
You have made an easy recipe look so difficult and so expensive! There is no need to add cream! Milk when cooked in butter n heavy flour will eventually turn to its thicker cousin ‘Cream’-
So sad pls remove this recipe n re do it
