If you already erased your phone...

On your Apple Watch, tap Settings > General > Reset > Erase All Content and Settings

This helped alot ! I got the iPhone 15 and my watch wasn’t working so it did take me to unpair from old phone new phone removed watch from the purchases I cloud, then reset in the phone . Shut it all off then it paired but had to do manually my iPhone 15 didn’t or couldn’t get a pic of the blue thing had to use the code numbers . Man no way I would have been able to do this without your video.

Couple of suggestions to improve your already quite good video.
For people quite new, you could mention “Load the Apple Watch App”. That might seem self evident to you, but guess what, some of us don’t intuitively know that.
Second, My older Apple Watch will only Pair if I put it on.
