- 3 Egg yolks

- 3 Eggs

- 200g Heavy cream
(生クリーム)
- 1Tsp Vanilla extract

- Hot water
(お湯)
- Bake at 150℃ for 50 minutes
(150℃ - 50分焼く)
- Refrigerate for 4 hours

Tips for anyone who is making this:

Don't stir the caramel, it will solidify and you won't have a nice caramel layer on the top
Don't pour too much caramel in one ramekin, as again, it may solidify and there won't be a nice layer on the top
Don't overbake the puddings, as the eggs will curdle and you'll have a layer of cooked egg on the top!

I made this and it was amazing. The texture is amazing and super smooth and it looks beautiful. The trick for getting the flan out of the mould works incredibly well too. I recommend using ramekins or a (not super) thin glass mold or something with even thickness throughout and a larger opening to get the flan out or it won’t cook through. I tried using these glass yogurt containers that i saved along with ramekins and although, the ramekins turned out great the yogurt containers, which were thicker on the bottom stayed liquid even though the top cooked.

and tip! adding a teaspoon or three of corn syrup, honey, or even golden syrup into the caramel before cooking (mixing is ok and recommended) makes it almost impossible for the sugar to crystallize and you can make the caramel without worry. Mix once it just begins to turn amber (even if it is only amber in the middle) because at that point it turns dark rapidly and will turn darker once cooled because of bubbles.


now for personal preference, not objectively speaking I think reducing the sugar to around 70-80 grams is good. The caramel is added sweetness as well so i think it tastes better this way.

I wrote down the recipe for myself so I could save it for later, posting it here for anyone else who would like to copy and use later! :)
●Caramel:
- 80g Sugar
- 15ml Water

●Pudding:
- 3 Egg yolks
- 3 Eggs
- 500ml Milk
- 90g Sugar
- 200g Heavy cream
- 1Tsp Vanilla extract

●Instructions:
- Add sugar and water into a saucepan and melt on medium heat, do not stir and wait for it to become golden
- When golden, remove from heat and pour into small glass mould/ramekins and let it set
- Move on to pudding, add egg yolks and eggs in a bowl and stir until combined
- Heat up milk, sugar and heavy cream in a saucepan, keep stirring so it doesn’t burn, heat until there is foam at the edge, do not boil!
- Add the mixture to the eggs a little at a time and continuously stir until all mixed
- Add vanilla for extra taste and mix, but it is optional 
- Strain it to remove any leftover egg white or lumps
- Pour the finished mixture into the previous moulds and place in a tray with tall sides
- Pour hot water into the tray about 1/3 up to the moulds
- Bake at 150℃ for 50 minutes in the oven
- When done, put in refrigerator to set for 4 hours

Do not substitute heavy cream for milk. Milk works but the heavy cream just takes it to a whole new level of fluffy and makes the texture so much more smooth as well.
