Viral Cucumber Salad

It’s #trendingtuesday and sometimes you just need to eat an entire cucumber so @Alexawhatsfordinner whipped up this Korean Kimchi Cucumber Salad recipe inspired by the cucumber king @logaagm 🥒

1 large cucumber
1/4 cup rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1/2 tablespoon gochujang
½ - 1 tablespoon gochugaru, depending on spice tolerance
2 teaspoons granulated sugar
3 garlic cloves, minced
1 tablespoon sesame seeds
1 tablespoon scallions, finely diced

1. Use a mandolin to slice the entire cucumber into a large sealable container.

2. Add in all the rest of the ingredients.

3. Close the lid and shake the ingredients until combined.

4. Enjoy straight out of the jar!

Cucumber salad is my favorite!!! Have you seen the viral cucumber salad I’ve seen it made a few different ways one is more of a Korean style idk what you call the other but I’m sure if you search “viral cucumber salad” you’ll see if you haven’t already . But nothing beats it the way you made it I also like mine with tomatoes and Italian dressing sometimes too .. ❤😊
