For the Asian cucumber salad, I suggest white vinegar or mirin, soy sauce, chili oil, sesame oil, sesame seeds, garlic and sugar. And a bit of oyster sauce if you’re into that

Any decent mandoline won't threaten your finger. It's really easy and quick to use one.
I used mine for coleslaw last week, and it was absolutely zero effort with amazing results.

Obviously it's a bit bulky for a single cucumber.
