One doesn’t logically add intestine skins ‘to’ a recipe like an ingredient. That translation makes no sense, since more ingredients follow the zurumu.

There is a city in Turkey called Erzurum. It could be just as easily assumed a seasoning from what is now Erzurum was called ‘zurum’, something like like sumac or mahleb, both of which are used in sausage-like recipes to this day.

This scares many people but it's one of my favorites. Sadly less and less people cook it every generation.
