I just made a version of this for lunch, thank you! I had some cooked chicken so used that instead of the mince, but it was really lovely.

Interesting take on Spanish cauli rice as a burrito component, look good. I'd top it w/ cilantro + sour cream or yogurt.

How many grams of carbs is in this? The onion, garlic and can of tomato looks like it would tip this into quite a high carb content by the time it’s all added up

Canned diced tomatoes come in 14.5 oz cans or larger. Tomatoes and chilies come in 10 oz cans. Where are you finding 12 oz cans? Are these actually aseptic cardboard packages instead of cans or are you measuring 12 ounces dry matter from a drained 14.5 oz can?
