Why use Citrus salt?
If you are adding lemon or lime juice this is pungently sour, but the zest is not, so it gives cheese or tomato-based dishes a lift but doesn’t overpower them.
You can add dehydrated oregano as well for a delicious flavour.
Drying the zest out take about 9 to 10 minutes in air fryer on bake - 160°C. Keep an eye on them and ensure that there is no white pith on the citrus.

The ratio is 2 tbsp finely crushed dehydrated citrus zest to ½ cup salt.
The citrus needs to be dry before adding to the salt and then lightly crushed in a grinder or pestle and mortar. Keep in a dry small jars and seal in a dry place.
