Made this tonight, it was reallyreally good. First time making a Thai curry paste from scratch (I know it’s not 100% traditional) the fresh ingredients make all the difference. Nice balance of hot, sweet, salty and sour. New favourite Thai curry 👌

I have to say that this green curry looks great! And using green onion and cilantro to make it look even more vibrant was very smart 😊
It's a bit different from authentic Thai green curry (we do not use green onion nor cilantro, and we use galangal instead of ginger. But I know galangal is not easy to find everywhere). Nonetheless, it looks delicious and I would love to try it. Great share na ka 🙏
