This is brilliant. I have to think that because it's pretty much the recipe I've been using for about 30 years, when I have the time. 😁😁 I like the clear way things are explained and the personality of the chef. Very good.

I worked with an American guy in the 1980s who had worked in Thailand for many years and who was married to a Thai woman. Her family owned one or more restaurants in Bangkok and he shared some of her recipes. A couple of observations: the bit about not shaking the can of coconut milk is very important. You need to mix in the thick part of the coconut milk first and then gradually work your way to the runny stuff. I think that it stops the coconut milk from splitting. Never, ever use a blender or food processor to make the paste. It cuts the fibres instead of smooshing them. We can't get the Thai eggpant/aubergine where I live (coastal NSW, Australia), so we use green beans instead. I think that I was told that white palm sugar is better than the brown palm sugar.

Pretty standard recipe except it's missing nam pla and palm sugar. It's hard to find fresh Thai green chilies in S. California so I resort to a good packaged green chili paste.

I love the round aubergine and always buy them when I can find them! The long thin purple asian ones would be a great substitute, but they take less time to cook! I can't wait to try making your green curry Pom! Thank you for sharing your recipe! =]
