Need some gorgeous summer blueberries and flake pastry in your life, but don’t want to make a huge pie? This two serving blueberry galette is what you need to make!

Summer is a fantastic time to take advantage of all the gorgeous produce available both in stores and the farmer’s market.

For me, blueberries are a must buy for summer and a pie is such a fun way to use them up, especially when hosting friends over.

If you’re planning on hosting a smaller get-together, maybe a date night with you and your partner, or just having a friend over after work for a glass of wine, making a huge pie is not the best plan.

Instead, you’ll want to make this small-ish, two serving blueberry galette. A galette is basically a more rustic/freeform option than a pie and this small version will be great for your small get-together.

Makes: 2 servings
Prep Time: 45 minutes
Cook Time: 30 minutes
Chill/Cool Time: 1 hour 30 minutes

✨INGREDIENTS
Pie Dough
¾ cup AP flour (95g)
½ teaspoon sugar (2g)
¼ teaspoon salt
¼ cup cold unsalted butter, cut into small pieces (55g)
1 egg, divided
¼ cup ice water
Optional: ½ tablespoon sugar

Filling
3 tablespoons sugar (37g)
1 tablespoon all-purpose flour (7g)
⅛ teaspoon salt
1 ¼ cup blueberries (170 grams/6 ounces)
1 tablespoon lemon juice (14g)

✨INSTRUCTIONS
Pie Dough
Place flour, sugar, salt and butter into a food processor. Pulse a few times until the butter is about the size of a pea.

Add the egg yolk and 1 tablespoon ice water. Pulse a few times, add in another tablespoon ice water and pulse a few more times until the dough begins to come together. (Add more water and pules until a small portion of the dough stays together when squeezed into a ball). ***Do not allow the dough to form a ball in the food processor.

Transfer dough to a large piece of parchment and press together until it comes together. Form into a disk and wrap up in parchment. Chill dough for 1 hour.

Filling
Whisk together sugar, flour and salt in a medium bowl.

Add in blueberries and lemon juice. Mix to combine and set aside.

Assembly
Preheat oven to 375 degrees (F), and place a rack to the bottom position in the oven.

Roll dough into a 10-inch circle and transfer to a parchment-lined baking sheet.

Using the tines of a fork, dock the dough in the center a few times.

Place blueberry filling onto the center of the dough. Fold the edges of the dough up around the blueberry filling, leaving the filling in the center exposed.

Whisk the reserved egg white and lightly brush the dough with it. If desired, sprinkle the dough with ½ tablespoon of sugar.

Bake 375 degrees (F) for until the filling, is bubbly and crust is golden brown, 30 to 35 minutes.

Allow to cool slightly, about 30 minutes, before serving!
