Glazed Sunchokes

My favorite way to cook sunchokes is to glaze them, here's an example of how I do it. You don't have to add any sugar at all, rather the natural sugars come out via deglazing and coat the tubers. I add some birch syrup and hickory nuts to deepen the flavor but they're optional.
