When I was speaking with other gardening friends I mentioned I had planted some sunchokes. You would have thought I said I decided to sink Wisconsin into the Great Lakes! In unison they bellowed NO! They said the indigestion would have be doubled over in pain and with horrible gas!!! I don't ever remember having gas (flatulence) with sunchokes.

Somewhere I came across a person who had said simply parboiling sliced sunchokes for 3-4 minutes will reduce gas. I will say I noticed the water they were boiled in turns a bright green during the boiling. Oh, and to keep their peak nutritional value you don't want to parboil more than 4 minutes, but definitely 3. This all could be simply my imagination, so if you try this, please let me know if you notice any difference. I'm also curious if steaming would do the same thing except I'd probably do closer to four minutes.

My son gave me 8 tubers last spring and I have a bountiful crop. I have three jars fermenting at the moment, I read that you don't seal the lids for 6 weeks or the fermentation may cause the jars to explode is that anyone's experience?
the thing is they digest in the large intestine, not the stomach which is where the gas comes from. I'm waiting to see if they are less gassy when fermented.
I cut two large plastic barrels in half (and cut off the bases) I then buried my 4 half barrels 2/3rd down in the ground to stop them spreading.
