Green Apple-Sunchoke Dish

Peel and chop the green apples and sunchokes. Keep in water containing salt and lemon juice to prevent them from getting dark. Chop the onions and carrots, and cook in olive oil. Drain and add the green apple and sunchokes. Add orange juice, grated orange and lemon peel, granulated sugar, and salt. Bring to a boil and cook over a low heat for about 20 minutes. Add the dill and serve cold.
