Shio Koji Pork Loin
Shiokoji make a pork loin tender and increases the Umami of the meat! The sauce can be used for pasta or other dishes to bring richness.

500-600g Pork loin
2-3 tbsp of Shio Koji
1 tsp of Garlic powder
*4 Tbsp of Soy sauce
*6 Tbsp of balsamic vinegar
*100g brown sugar
*200ml water
2 tbsp of potato/cornstarch to thicken the sauce

Marinate pork loin with Shio Koji and leave it for 1-2 nights in the fridge
Sprinkle with garlic powder
Sauté meat until little brown, and put *marked ingredients into the pot
Pressure cook for 15min under high pressure (instant pot )
