INGREDIENTS
1 sweet potato
12-5 brussel sprouts
1 can of chickpeas
1/4 red cabbage
1 avocado
3 tbsp olive oil
3 tbsp garlic powder
3 tsp salt
2 tsp paprika
1 tbsp nutritional yeast

TAHINI DRESSING
1/3 c tahini
2 tbsp lemon juice
1 tbsp Dijon mustard
1 tsp salt
1 tsp garlic powder
Water if needed for consistency

METHOD
Chop sweet potato, brussel sprouts and red cabbage. To the sweet potato, add 1 tbsp olive oil, 1 tbsp garlic powder, 1 tsp salt and nutritional yeast. Preheat oven to 400F, then bake for 40 mins. Next, season brussel sprouts and chickpeas with the remainder of the olive oil and spices (either together or separately). Take the chopped sweet potato out of the oven after 20 mins, add the brussel sprouts and chickpeas, then bake for the last 20. Serve with red cabbage, avocado and tahini dressing, enjoy!
