I had a risotto prepared in a Grana Padano cheese wheel in a restaurant in Milan in 2019. The restaurant is called Osteria Conchetta. They do the final preparation of the risotto in the dining room and make a show of it by flaming an alcohol. It's a wonderful presentation and the risotto was amazing.

Hi I’m a new subscriber after a little while, this is unrelated but If you are trying to make one of the Roman Pastas, They have GUANCIALE in EATALY, If you live in a major city like NYC, LA, Chicago, or Like myself, Boston, that has an Eataly you’ll definitely find it. 9 months is Grana Padano.
