I'm Italian and confusing Parmigiano Reggiano with Grana Padano is heresy.. Parmigiano Reggiano comes from the union of whole milk, milked the same morning, and milk milked the evening before and skimmed all night in special tanks. The production of cheese therefore begins with partially skimmed milk. Grana Padano is produced from the raw milk of one or two daily milkings, partially skimmed by surfacing. This makes it leaner than that used in Parmesan, significantly affecting the final result
