Did you know that there is a parmiasiano "stock exchange"?
You can pay for a wheel of parmiasiano to sit in storage as to increase its value proportional to the amount of time you let it sit.

The longer it ripes the more expensive the cheese gets. That's why you can buy a wheel of parmiasiano at a cheese bank and it'll act like a bond or share you'd buy from a company making parmiasiano also a finance product.
People pay for the storage of their own wheels of cheese to fund their future which is hilarious to me.

Don't forget the part where they use rennet make this and any cheese that curds. You get rennet from the fourth stomach lining of hooved animals. They have to die to get this

Atleast a year* to be called parmigiano. But it's not very good yet (pretty mild taste) it becomes succulent after 24 months and becomes better and better until about 63 months (in my opinion, I haven't tried older than 63 months) even in Italy it's not too common to find ones that are older than 36 months and they are also more expensive
