Perfect explanation ☺️ now I get it why my kefir is not that smooth & thick. I only got fermented milk so far, even though I add cream to my milk.

Thank you for explaining it so well about the polysaccharides 🙏🏻 now I also understood what you meant by „rivers“.

I’ll use more grains now and watch how it will turn out more smooth and thick 🥛

Funny you should post this. Mine over fermented last night also. Had a challenge getting it to strain. Do you 2nd ferment after this?

I did that twice. Am I stressing my grains out? Also, I split my grains, put in two separate jars and started over

Way to much grains… you barley have any kefir.
