STUFFED EGGPLANT BOATS WITH MEAT AND CHEESE

INGREDIENTS:
1 kg small eggplants
500 g minced beef
1 chopped onion

1 can chopped tomatoes
½ cup water
Salt and pepper to taste
½ tsp. Cinnamon
¼ tsp. Sugar
Salt and pepper to taste.
¼ cup chopped coriander
1 kraft Cheddar Cheese cheese tin, Shredded

DIRECTIONS
THE BOATS
Chop the eggplants in half length-wise,
drizzle with oil and bake in the oven.

MEAT STUFFING
In a pan with some oil sauté the onions .
Add the beef and cook till it change colour.
Season with salt, pepper and cinnamon.

TOMATO SAUCE
In another pan add the tomatoes, water, salt, pepper and sugar.
Let it simmer for 15 minutes.

PUT IT TOGETHER
In a baking dish pour the tomatoes sauce
Arrange the eggplants on top
Fill the eggplants with the meat mixture.
Top with cheese and bake for 15_20 minutes

Garnish with coriander .
