I sepeculate that Leshens are photosynthetic lifeforms that had gained slight intelligence. As for the anatomy it's probably a mimicry similar to how other animals mimic others. There are also plants that mimics animals like insects

I know I'm late, but I still wanna say that this reminds me of the media altered version of the wendigo. Antlers, skull, some kind of monster luring in the forest waiting for it's pray.
But the media altered wendigo still seems to have some of the original traits. Pale skin, elongated limbs, the stench of dead body, spirit posesing trough eating a human, and some of the stories say that the wendigo(media one) brings cold everywhere he goes, the original one was described as a hunter of the winter, this could be a reference to that.
I know it's a long comment, but could this be something accidental or somebody inspired from Leshen to create the wendigo we all know today?
Who knows.
