How To Make Persian Joojeh Kebab

2kg chicken breast/thigh
1 sliced onion
1/4 cup olive oil
1/4 cup lime juice
2 tbsp salt
1 tbsp pepper
1 tbsp turmeric
1 tbsp paprika
2-3 tbsp yoghurt
2 tbsp saffron water

Mr. Henry, I have been going to the same Persian restaurant for more than 20 years and always order the Chicken Barg (kebab). I know the owners I go there so often and one always teases me about giving me the recipe but she never does. I've tried many other recipes but nothing has ever compared so I keep going back to that restaurant. That was until I came across your recipe!!! It is exactly like the chicken served at my favorite restaurant. This is absolutely one of my favorite meals and I can't thank you enough for putting up this fantastic recipe!

I made this recipe for my family for dinner tonight. I followed the recipe precisely, changing the measurements of seasoning to match the 500g of chicken thigh I used, and only swapping the Persian lime juice (I didn't have it) for fresh squeezed lime. Absolutely delicious recipe as usual, Henry. Even my 8 year old son, one of the world's pickiest eaters, absolutely loved it. This is the fourth recipe of yours I've tried, and they've always come out great and have everybody who ate them raving. Thank you very much, your channel is one of the best food channels on YT.

I made this last night for dinner and everyone loved it! This is by far the best recipe I've come across. I've seen some say don't add paprika or turmeric but I disagree.... just try henry's recipe and you'll notice the difference. I've become a fan overnight! Thanks Henry for sharing!!

Hi Henry, just a tip, add saffron first before everything else, so you don't waste any saffron. If you add it with onion, you don't get the same result as onion absorbs all the saffron

Only way to cook is skewers over mesquite. The yellow rice is not saffron. They simply cook some rice with turmeric to make it yellow. Saffron expensive.

Hi, I made this marinade today and it's in the fridge. I had lesser chicken than you and therefore had a lot of sauce left. I thought I can use it as a dip maybe, but since it is marinated in raw chicken, should I cook the sauce? I don't want to waste it. tastes good 😊.

also, I found this recipe because I went to eat in a persian restaurant and loved it. they serve dit with saffron rice, the top was a bit yellow. how do you prepare this rice? thank you 😊

Isn't it better to mince or grind the onion in the food processor? That way, you can get more onion juice in the chicken.
