Miyeokguk is Korean seaweed soup. It is traditionally enjoyed on one’s birthday, to honor the mother. (New mothers eat a lot of myeokguk because of its amazing health benefits). It’s great health benefits and savory broth make it one of many Koreans’ favorite comfort foods!

Ingredients:
-16g Korean dried seaweed
-1 lb beef brisket (cut into thin, small chunks)
-5 garlic cloves (minced)
-1 tbsp fish sauce
-1 tbsp soy sauce
-8 cups water

Directions:
1. Soak dried seaweed in a large bowl of water for 30 min. Rinse, drain, and squeeze out any excess water.
Cut into bite size pieces using scissors.
2. Put the seaweed and 8 cups of water into a large stock pot. Seaweed bubbles a lot when cooking, so make sure there is enough space in the pot. Cover and boil for 10-12 min.
3. Turn heat down to medium low and throw the beef in. Cover and cook for another 40 min.
4. Stir in fish sauce, soy sauce and garlic. Taste. Add more salt if you need. Add more water to the pot if the water cooks off too quickly. Serve with rice and banchan! Enjoy!
